Basil and Tomato Chicken with Mushrooms and Asparagus


5 Chicken breasts

4-5 small tomatoes chopped

1 clove garlic minced

½ small onion

1 tsp olive oil

1 tsp balsamic vinegar

handful of fresh basil chopped

Seasoning for chicken

1 tsp Italian seasoning

½ tsp garlic powder

½  tsp onion powder

½ tsp black pepper

¼ tsp salt

Combine seasoning in a bowl and sprinkle evenly on chicken breasts


1.Preheat oven to 350 degrees (or you can grill your chicken)

cover and bake for about 45-60 minutes until juices from chicken run clear.

2. Meanwhile, in a small bowl combine chopped tomatoes, garlic, onions, vinegar, oil and basil. Refrigerate until chicken is ready and then serve on top of chicken when ready to serve.

Instructions for asparagus

Preheat oven to 400 degrees

The directions for roasting all our veggies during the challenge are easy J use 1- 2 tablespoons of your favorite cooking oil (coconut, avocado, olive) and season with salt and pepper and garlic powder 

Place veggies on a baking sheet and bake for 30-45 minutes, stirring half way and test with a fork, when veggies are fork tender they are done!


1 8 oz package mushrooms

1 tablespoon olive oil

1 clove garlic chopped



1.   In a small frying pan heat olive oil on medium, add mushrooms and garlic and cook until mushrooms are softened and begin to release excess water.
