Bison Bacon Burgers with Sweet Potato and Zucchini Fries

Who says you can’t have a Burger and Fries AND be healthy?!?

Ingredients

1 lb ground bison
½ tsp black pepper
½ tsp garlic powder
¼ tsp chili powder
¼ tsp onion powder
1 egg beat
2 slices nitrate free bacon
1 tomato (garnish)
mushrooms (sautéed with 1 clove garlic minced)
1 avocado sliced
½ small onion sliced into rings

Instructions

1.    In a large bowl combine bison meat, pepper, garlic powder, onion powder, chili powder and egg
(I think the best way to combine the meat mixture is with your hands, plus it’s fun to get dirty while you cook!)
2.    Form bison into patties and pan fry in 1 tablespoon of olive or coconut oil over medium heat until desired doneness (flip the burgers to evenly cook)
3.    Serve on top of zucchini fries and top with avocado, mushrooms, onion, tomatoes and bacon. Serve along side sweet potato fries 


Sweet Potato Fries
2 large sweet potato
1 tsp paprika
½ tsp black pepper
½ tsp salt
½ tsp garlic powder


Instructions 

1.Pre-heat oven to 450 degrees
2. Slice the sweet potato in half and then in half again. Cut into fry size strips, make sure all fries are similar in size so they will all bake evenly. (About  1 ½ inch long, ½  inch wide)
3. In a large bowl toss sweet potatoes in enough avocado oil to coat, about ½ a tablespoon (you don’t want to over dress the fries because they will get soggy in the oven instead of crunchy)
4.  Add spices and toss oil coated fries in spices, stir until fully coated
6. Place fries on a foil lined baking sheet and bake for 30 minutes until crispy on the outside and soft on the inside. Stir occasionally during cooking process to ensure that one side doesn’t burn.

Zucchini Fries

Ingredients

2 large zucchini
1 large egg
1- 1 ½ cup almond meal (depending on the size of your zucchini)
1 tsp garlic powder
¼ tsp salt

 

Instructions

1.    Slice zucchini into ½ inch long, ¼ inch wide slices, place on a plate lined with paper towels and lightly salt, place another layer of towels on top of the zucchini (this removes excess water that can cause fries to be soggy when baked)
2.    Leave zucchini in between towels for about 30 minutes
3.    In a small bowl beat 1 egg, in another bowl combine almond meal and spices.
4.    Dip zucchini in the egg mixture and then bread in the almond mixture and place on a baking sheet lined with parchment paper. 
5.    Bake on 450 degrees for about 20-25 minutes until “breading” is golden and zucchini is crunchy. Stir occasionally * (To get a super crunchy fry, pan fry before baking.)
