Chicken Seasonings

I wanted to send you a few different ways to season chicken to spice things up with your meal plan. Sometimes I run out of time to prep and I end up eating grilled chicken and veggies all week. Which is great for my body but can be somewhat boring for my taste buds. Here are some go to, easy ways to flavor your chicken.

Macadamia nut and coconut coated chicken

Ingredients

5 chicken breasts

1 cup almond or coconut milk (I used silk unsweetened almond milk)

2 eggs

1 cup unsweetened shredded coconut flakes

1 cup chopped roasted macadamia nuts

1 tsp garlic powder

2 tablespoons olive oil

1 tablespoon coconut oil

Instructions

Pre heat oven to 350 degrees

In a large bowl , whisk eggs and stir in milk. In a separate bowl combine garlic powder, coconut and macadamia nuts.

Coat chicken in egg “batter” and then coat in coconut “breading”. Heat a large frying pan on medium heat with coconut oil and fry chicken until golden brown on both sides.

Transfer chicken to a baking dish with 2 tablespoons of olive oil and bake for 45 minutes until no longer pink.
