Citrus Pulled Chicken, Pork or Steak Bowls




1 lb meat (adjust according to your food prep needs)

juice from 1 large orange

juice from 1 lime

juice from 1 lemon

4 garlic cloves minced

1 onion diced

1 red or green bell pepper diced

1 jalapeno sliced

1 tsp chili powder

½ tsp onion powder

1 cup chicken, vegetable or beef broth


The easiest way to prepare this is to put it in the crockpot on low for 6½-7 hours . If you do not have a crockpot (you should definitely get one! They are amazing and great time savers!!)  You can bake your meat in the oven.

·      Choosing your meat:

·      Chicken use breasts, the are easy to shred

·      Pork:pork butt/shoulder

·      Steak: Flank steak



Serve with ½ cup rice and ½ cup black beans



Cook the rice according to the directions on the package.

I like jasmine rice for a couple reasons but mostly because you can cook it in only 25 minutes opposed to the usual 50-60 minutes that it takes to cook white or brown rice.

Top with cilantro, avocado and tomatoes (a little bit of goat cheese is also a great topping for these bowls)
