Coconut Whipped Cream


1 can coconut milk

1 tablespoon honey

1 tsp vanilla

¼ tsp cinnamon


*Place the coconut milk in the fridge for 2 hrs – over night (the coconut fat will separate from the liquid when chilled). Scoop out the coconut fat and place in a mixing bowl with the honey, vanilla and cinnamon. Mix together until smooth. Add a tablespoon or two of the coconut liquid to the mixer for a thinner whipped cream.


Honey Cinnamon Pecans

1 cup pecan halves

1 tablespoon honey

½ tsp cinnamon


Preheat oven to 400 degrees.


Mix honey, cinnamon and nuts in a bowl until the pecans are well coated. Place nuts on a parchment lined cookie sheet and bake until golden. Make sure you watch them and stir to avoid burning the bottom of the pecans.


Top a bowl of berries with the whipped cream and roasted nuts
