Egg Bake

 

Ingredients

 

18-24 eggs

2 broccoli crowns (steamed)

3 cups spinach

1 12 oz package mushrooms

salt and pepper to taste

 

Instructions:

1. Crack eggs into a large bowl and whisk until yolks break and are mixed evenly with whites, season with S and P.

2.Grease a large baking pan with coconut oil and layer mushrooms, spinach and broccoli (put broccoli on top, it will keep the eggs from getting soggy when baking)

3.Pour eggs over the veggies and bake for 40-45 minutes at 350 degrees. (Eggs are done with the center is set and no longer jiggles).
