Ground Turkey Stuffed Portobello Mushrooms

1 lb ground turkey breast
½ lb ground beef
4 big portobello mushrooms
3 cups spinach
1 small onion diced
1 garlic clove minced
1 bell pepper (any color) diced


1.    In a large skillet heat 1 tablespoon coconut oil over medium heat and add onions and garlic, stir while cooking so garlic doesn’t burn. Heat until onions are transparent
2.    Add meat and cook until browned then add spinach and peppers. Cook until spinach is wilted and peppers are softened.
3.    Meanwhile place mushroom tops on a baking sheet and broil until soft and toasted. Flip halfway to get both sides
4.    Fill mushrooms with meat mixture
