Honey Ginger Salmon with Roasted Broccoli

 

Ingredients

 

2 lb salmon

1-2 tablespoons grated fresh ginger

1 tablespoon sesame seed oil

1 tablespoon rice vinegar

2 tablespoons coconut aminos*

1 clove garlic mined

1 tablespoon honey

 

Instructions

 

Preheat oven to 350 degrees

Combine all ingredients in a bowl and pour over salmon, can be marinated 2-4 hoursbefore cooking.

Pan sear until a slightly golden crust forms on the fish and finish cooking in the oven for about 10-15 minutes (time varies due to thickness of the fish).

 

*Coconut aminos is a great substitute for soy sauce, it has a very similar taste, so much so that when you use it in dishes you’ll think its soy!

 

Serve with roasted broccoli

 

Broccoli

 

 1-2 broccoli crowns, washed and cut into florets

 

Toss Broccoli florets in avocado oil, salt and pepper and roast on 400 degrees for 35-40 minutes.
