Hummus & Grilled Chicken Lettuce Cups
½ cup hummus
1 lb grilled chicken: Seasoned with ¼ tsp chili powder, ½ tsp garlic powder ½ tsp onon powder, ¼ tsp ground cumin
1 tomato diced
1 avocado sliced
1 small jalapeno minced
¼ cup diced black olives
1 head of romaine lettuce
1. In a large bowl, coat cubed chicken in spices and pan fry in 1 tablespoon coconut oil until fully cooked.
2. While chicken is cooking slice up the toppings: avocado, olives, tomatoes and jalapeno. Cut head of lettuce into fourths and separate into individual leaves.
Assembling the lettuce cups: Spoon 1 -2 tablespoons of hummus on to each lettuce cup, add ¼ cup turkey and top with vegetables. * season lettuce cups with hot sauce of your choice *optional
