Grilled Chicken with Sweet Potato Mash & Steamed Broccoli



6 chicken breasts

2 sweet potatoes

6 cups broccoli cut into florets

1 tablespoon ghee or coconut oil

1 tablespoon coconut sugar or honey




1.    Season both sides of chicken with salt and pepper. Grill for 12 minutes on each side or until fully cooked.

2.    Peel potatoes and cut into 1 inch cubes, meanwhile boil 5-6 cups of water. Once water comes to a boil spoon in potatoes and boil until soft.

3.    In a separate pot boil 5-6 cups of water and steam broccoli until bright green and fork tender.

4.    Once potatoes are done, drain the out the water and return potatoes to pot, mash with a potato masher or fork until smooth. Add in coconut oil or ghee and coconut sugar, mix until combined.
