Rosemary and Garlic Lamb Lollipops


4 lollipops (individual racks of lamb)
1 sprig rosemary, washed and minced
2 cloves garlic minced
salt and pepper
1 tablespoon coconut or olive oil for frying


Take lamb out of the fridge and let it sit out while you get your herbs ready. 

1. Combine mince rosemary, garlic and spices in a medium bowl
2. Drizzle a little bit of olive oil on both sides of the lamb and rub the herb mixture on the chops creating a crust.
3. Heat up a large pan with your choice of cooking oil to medium heat. Pan should be hot before you cook the lamb, this way a nice golden crust will form on the meat.
Fry each side of the lamb racks until golden brown. Keep a close eye on the meat so you don’t burn the herb crust, cook until desired doneness (about 4 minutes each side for medium rare)
