Vanilla Protein Bars

 

Homemade Protein Bars

 

 

1 scoop plant based protein powder (I used the Vega brand with greens vanilla flavored)

1/3 cup sunbutter

8-10 dates

1 tablespoon chia seeds

1 tablespoon flax seeds

1 egg + 1 egg white

¼ tsp cinnamon

 

Optional: top with chopped nuts (I used pistachios the extra crunch is a nice contrast to the chewy texture of the bar)

 

 

Pre heat oven to 350 degrees

 

Combine sunbutter, eggs, protein powder, flax seeds and dates in the food processor and pulse until well combined, stir in cinnamon and chia seeds. In an oven safe pan coat with coconut oil (this will keep the bars from sticking during the baking process)

Bake for 15 minutes. Bars should be fluffy and have an almost cookie like texture.
